Dumplings with Asparagus

A simple and quick meatless meal are potato dumplings with green asparagus. This is a great dish for a tasty dinner, but also a filling lunch.

Ingredients for Dumplings with Asparagus

  • 500 g gnocchi or dumplings
  • One package of 500 g green asparagus
  • 120 g of onion, cut into one smaller slice
  • Three cloves of garlic, about 15 g
  • 10-20 grams of cheddar or parmesan cheese
  • Add 3 dried tomatoes in oil which are about 45 grams
  • three teaspoons of sun-dried tomato oil
  • Two tablespoons of clarified butter with as many as thirty grams of spices and herbs

Dumplings With Asparagus
Step 1: Cut the asparagus
I used 500 grams of thin asparagus, so you should carefully wash a bunch of young, green asparagus under cold running water. Since the heads are very delicate and brittle, they must be handled carefully. Cut off the woody ends of each asparagus by holding the tip. You can use your hands to break the asparagus at the point where the edible part begins. This is how all asparagus should be prepared. After drying on a paper towel, cut into pieces no larger than 3.5 cm. Keep the skulls whole.

Step 2: Fry the onion
Heat a larger frying pan with a solid bottom. You should add about 30 grams of clarified butter. You can also mix butter with olive oil or use a mild olive oil. Watch the butter until it melts. Immediately add the diced and peeled onion (alternatively, you can use the same amount of leek). After reducing the heat to just below medium-low, fry the onion, uncovered, for about ten minutes. Stir the onion every few minutes with a wooden spoon.

Step 3: Add garlic and asparagus
When the onion becomes soft and caramelized, you can add three chopped and peeled garlic cloves, prepared asparagus, three tablespoons of olive oil from a jar of sun-dried tomatoes and plenty of salt and pepper. Stir the mixture and cook for an additional ten minutes.

Step 4: Add dried tomatoes
When the asparagus is soft but still crunchy, add three sun-dried tomato halves in oil. Prepare them, cut them into smaller pieces. Add the spices and continue frying for another two minutes.

Step 5: Prepare the dumplings.
In the meantime, prepare 500 grams of potato dumplings. Fry the asparagus with the additions. you can easily cook them or buy from store. If they don’t cook right away, simply place them in boiling salted water and simmer uncovered for a few minutes until they float to the top. If you’re not sure if they’re soft enough, cut a piece off and try.

Step 6: Mix and present
Throw the soft noodles directly from the water into the prepared asparagus with spices. Combine the ingredients and add grated parmesan cheese, in the form of thin flakes or small holes. Taste the food and season it if necessary. You can also add olive oil, a little lemon or lime juice, cheese, salt or water to make the dish softer.

Tip: If you are a vegetarian and would like to add Parmesan or cheddar cheese to your asparagus, look for products specifically marked as vegetarian or carefully check the product ingredients to be sure that microbial rennet was used in their production and not animal rennet. For vegans, there are also plant-based cheese substitutes available that mimic the taste and texture of traditional Parmesan or cheddar cheese.
