Clean 500 grams of mushrooms if needed. Peel the skin from the caps of the larger mushrooms; peeling the smaller ones is not necessary. Cut off the stems first, followed by the crowns. The mushrooms exude water when chopped too finely, which causes them to shrink even more.
Add butter or olive oil to a skillet with the chopped mushrooms. Keep the pan exposed. The mushrooms will leak water whether you stir them right away or wait.
