A simple snack to make is cottage cheese-stuffed cucumbers. Its recipe is also quite easy and versatile. You can make something incredibly lovely and tasty with only a few components.
Ingredients
- 350 g of greenhouse cucumbers or larger field cucumbers – I used 2 “snake” cucumbers
- 100 g of fluffy Almette-type cream cheese
- 2 radishes – about 30 g
- 2 tablespoons of chopped chives
- Spices: a good pinch each of pepper and salt
- Optional decoration: chives, dill, parsley, radishes, cress
Stuffed cucumbers with cottage cheese
The cucumbers were peeled and their seeds removed after being weighed.
This recipe will yield roughly eight sticks of stuffed cucumbers from the amount of materials provided. I calculated the number of calories using the ingredients I used. This is an estimate of calories derived from the ingredients I used in a particular recipe.
Recipe for stuffed cucumbers with cottage cheese
Select longer and fatter cucumbers. To make them look more appealing on the dish, give them a thorough cleaning and only half peel them. Roughly chop them into 4 cm high pieces. Hollow out the center of each piece with a “melon cutter” or a small, thin knife. To prevent the cottage cheese from falling out of the bottom, cover the thin sides and approximately 1 centimeter of the bottom with cucumber.
Put 100 grams of your preferred softened Almette cheese or the smoother, creamier Philadelphia cheese in a another bowl. Add two tablespoons of chopped chives and two finely sliced radishes to the cheese. Add salt and pepper to taste and season everything. Add extra spices just as needed; start with a generous pinch.
Advice: You can use finely chopped onion in place of the chives. To the cottage cheese, you can also add finely chopped fresh pepper, like red pepper. To make the cottage cheese more compact, we don’t add cream.
Partially fill each cucumber stick with cottage cheese. Add a dash of freshly ground pepper to everything. Add some extra decoration to each packed cucumber piece by adding slices of radish and fresh herbs, or add cress in the spring.
Advice: You can use a piece of cold-smoked salmon in place of the radish.
Small and short ground cucumbers can be split in half lengthwise and the entire seed core removed. We’ll make something akin to a cucumber boat. The wet seed core should be replaced with cottage cheese.
